We’re halfway there!

Well, it’s the middle of the week already. I tried this recipe last night and it was a huge hit in our house. I loved it because it was quick, easy and delicious. So I wanted to share it with all of you!

Oven-Baked Chicken Fajitas

Ingredients:

1 large onion

1 medium red bell pepper (I used a mixture of bell peppers-red, yellow & orange about two cups)

1 lb boneless skinless chicken breasts

1 package Old El Paso fajita seasonings mix

Soft tortillas or tacos

Directions:

• Heat oven to 400F. Spray 13x9 glass dish with cooking spray. Cut onion and peppers into even slices; place in baking dish.

• Cut chicken breast into thin strips; add to vegetables in dish.

• Sprinkle with seasoning mix, and stir until coated.

• Bake 35 – 40 minutes, stirring halfway through.

• Spoon small amount of mixture into tortilla or taco, top even with salsa, sour cream and/or cheese.
